Chipotle's Corn Salsa

Ingredients

  • 6 ears sweet yellow corn
  • 2 Poblano chilies
  • 1/2 red Onion, diced
  • 2 Jalapenos, diced
  • 1/3 cup chopped cilantro, chopped
  • 1 tablespoon lime juice
  • salt and pepper to taste


Instructions

1. Roast the corn and poblano chiles on a grill and let cool. Cut corn off the cob. Combine all ingredients and season to taste.
