Garden Sauce with Fresh Vegetables

Ingredients
- Olive oil
 - 2 garlic cloves minced
 - 1 large green pepper chopped
 - 3 pounds tomatoes skinned and cored
 - 2 tablespoons parsley italian
 - 1/2 teaspoon salt
 - 1/4 teaspoon pepper
 
Steps
-  Prepare all ingredients 
- Chop green pepper
 - Bring a pot of water to a boil add tomatoes until there is a break in the skin remove from hot water and slowly peel skin from tomatoes, core the tomatoes and chop into medium pieces
 - Chop parsley
 
 - Coat bottom of a large pan with olive oil
 - Add all ingredients at once cook at a simmer for about 60-90 minutes
 - Serve with favorite pasta
 - Hint: my favorite pasta with this recipe is ziti noodles
