Cream of Crab Soup

Ingredients

  • 1 quart half and half
  • 1 pound crabmeat
  • 1 can chicken broth
  • 1 stick butter
  • 1/2 cup flour
  • 2 tablespoon old bay
  • 1 tablespoon parsley

Steps

  1. Make a roux from the butter and flour
  2. Add chicken broth slowly and stir while thickening
  3. Add half and half
  4. Stir in crabmeat and seasonings
  5. Serve in a crusty bread bowl or with crusty bread
  6. Optional: just before serving add a teaspoon of sherry
